Hey guys .. welcome back to my blog, a blog where i will tell you about my activities starting from the time i woke up, until the time i came back to home from campus, so just sit back, relax and enjoy today's blog and i will still have one more post for tomorrow.. so don't go anywhere and stay tuned. Well lets start today's daily activities blog. Today's blog started at around 6 am, i woke up and prepared to go to campus, i finished at around 7.20 am and then i went to campus with my motorcycle.
I arrived at campus at around 7.45 then i prepared myself by wearing my cook uniform and cut my nail, then the senior incharge called us and told us to one line in the main kitchen, today's menu is european buffet, and i got the responsibilites to handle the spaghetti bolognaise by myself, so then i took out the minced beef, and other ingredients and start preparing. I begun by finely chopped 2 onions and then sautèd them in a splash of olive oil and a knob of butter until fragrant, then i put in the minced beef and sautèd until browned and cooked, after that i put in canned tomatoes and 2 tbsp of tomato puree and sauted until well mixed, and then add a splash of white wine and simmered until rendered down, then i seasoned them with salt and pepper and set it aside to cool down.
After making the bolognaise sauce, then i moved on to cooked the pasta, i boiled a stockpot of water then add a little bit of oil and salt, after it boils i then put in the pasta then cooked them around 7 minutes until aldente, after 7 minutes , i drained and quickly put the pasta inside a bowl of iced water to stop them from over cooking, after finished with all of the preparation i then took a medium sized serving dish then plated it. Then Mr.Jaya told me to plated one more plate for the chef's office, it is a honour to have my food served in the chef's office. Even tho it is far beyond perfect.
Finished with the restaurant service i then move on with clean up my work station then i prepare for tomorrow's menu which is celebes buffet menu. I got to handle the Konro Bakar, i thawed 50 pcs of Beef Chuck Ribs then my friend prepared the spice paste mix by blending galangal root, kalua nut, lemongrass and other ingredients and blended together until smooth, then i sautèd the paste mix with a little cooking oil until fragrant then i put in the beef chuck ribs and seared them until slightly browned, add water and let it boil and render until the beef is tender, after around 4 hours i took it out, and let it cool in the chiller for tomorrow's use. After around 4 pm we did general cleaning and finished at 6pm and went home and rest. Well that is my blog for today, i hopped you enjoyed it and as always...
