Daily Activity #15 - April 18th 2018


     Hello Everyone, Welcome back to my blog. a blog where i tell you all of my activities for today. Well this is my second blog for this week. well today's activity started at around 7.30 am i went from my home to campus and arrived at around 7.50 am. when i arrived, i wore my uniform and then sat down and chat with my friends, since i had a lot of spare time before one line. Then the senior incharge called us to enter the cold kitchen without equipment check. so then i headed to the locker first to put my bag and then head to the cold kitchen and did one line while waiting for other friends to also entered the cold kitchen.

     Then after morning pray that are led by today's chairman. The senior incharge did a short review and then Chef Dyno came in and teached us how to properly marinate a beef. Today is our day to prepare ingredients for tomorrow's menu which is Thai Menu ( Rotation Menu 2.2 ) so my group got to handle the Thai Beef Salad. So today's prepare i took out a whole beef tender loin and then cut the "head" and "tail" of the fillet and only took the filet mignon. After that i slice it in quarter and then marinated it with salt, pepper, chopped garlic and Fish sauce.




     After marination for about 1 hour, i took the meat and then put it in a vacuum pack and then vacuum sealed it. after that i took it to the sous vide machine and sous vide it at 150° F for 45 minutes and then let it cool down and store it in the fridge. Before the restaurant service started.i helped my friend to prepare some of the food for today's menu which is chinese food. i helped to plate and helped at the aboyer again for the 2nd time this week. At around 3 pm we did general cleaning and then at around 6 pm the day was closed by Maam Sury and then we surprised Mr.Faisal for his Master Degree's celebration. Congratulation Big Boss, you deserved it !
