Daily Activity #2 - February 7th 2018
Today i went to campus at around 7 AM to prepare for today's Restaurant Services ,we start one lining in front of the kitchen and then our senior are checking our grooming and tools one by one , after that , we are one lining in the Cold Kitchen to start today's activity , so the senior in charge instructed us to make more muffins , because are short in amount and some muffins are not in standard quality, so we are grouped to 10 groups and i was in the group 4 again , and my group were told to make Plain Muffins
So we started making the muffins by combining Flour and egg until nicely combine , and then we slowly add melted butter and then milk , put it in a mold and then bake it for around 30 minutes , so after the muffins done , we are ready to start opening the restaurant service , we are split into 10 groups again , from group 6 to 10 are attending the restaurant's needs , while group 1- 5 are preparing for tomorrow's menu , which is Indonesian Breakfast , the menus are Fried Rice , Fried Noodles with beef satay and Chicken Porridge
So my groups got the responsibilities to prepare the Fried noodles ingredients , i told them that i will prepare the beef satay since we don't need many people to prepare vegetables , so i did handling the beef satay for 40 Pax , i was told to take 1,5 KG of beef rump in the freezer and then thawing it , while i was waiting for the beef to melt down , i prepare the marination for the beef which is
2 pieces of Onion ( Finely Chopped )
5 Cloves of Garlic ( Finely Chopped )
100 ml of Sweet Soy Sauce
1/2 Tbsp of Salt
1/2 Tbsp of Palm sugar
1/2 Tbsp of Grounded Corriander
3 Tbsp of Peanut Oil / Salad Oil
So after done with the marination , i take the beef and cut it into tiny cubes , and put it into the marinate for around 2 hours , after 2 hours , my friends helped me to put it into screwers and the beef satay came out pretty good i would say , so we cover it and put it in the chiller for tomorrow's Grilling. after finish the preparation i got a coupon for enjoying a table manner in the restaurant for a Lunch break , the meal was great , it's really delicious.
After Break time we are back in cold kitchen for a short review by our senior in charge and they did a little introducing segment which is pretty fun and entertaining which makes the time passing by pretty fast. our senior is really kind to us , so around 4.00 PM we are doing general cleaning and then a short Briefing by Chef Faisal about our blog and explaining some things about breakfast and things that we need to do tomorrow. after the short briefing we are then instructed to go back home to rest
