Daily Blog #9 - October 22nd 2018
Hey Guys welcome back to my daily blog, this week i'm back to poltekpar's kitchen and today i got a task to incharge for the 1st year. so i woke up then prepared myself to go to campus, i woke up around 6 am then prepared myself and arrived at campus at around 7.30 am, then i wore my uniform and waited until 8 am so i can start today's practical process. so then at 8 am, i told the semester 1 to do one line in front of the kitchen then i check their name list.
While i checked their name. i also checked their tools and grooming. then i told them i went straight to the cold kitchen. today i incharged with Aulia and Uzi, but Uzi isn't here today. so it's just me and Uli, then after we pray , we then started today with a quick review. i reviewed around 10 person. i asked them about anything in kitchen basics. then after that i ask Mr.Jaya about today's practical and he said we make Basic Sauce which is Hollandaise and Bernaise.
So my friend prepared the ingredients and i showed them how to make it. i took 2 egg yolks and 400 ml of clarified butter and mixed them until emulified while being heated with double boiler method. after the yolks took all of the butter then we pour in some vinegar and salt pepper. we split the class into 2 groups. after finished with the sauce making , i then told them to do general cleaning. and then we finished today with a little information from Mr.Jaya and went home around 6 pm
